A Busy Couple of Days

This has been quite a busy week for us.  We made jars and jars of apricot/pineapple jam, blueberry jam, and zucchini cake and bread. Our garden is being very generous this year with zucchini!!  The children were dumping jam on pancakes this morning and on their zucchini bread. They love to smear it on crepes, french toast, and muffins.  I hope I made enough!!  The zucchini cake is at it's best when the wheat is freshly ground making it light and fluffy.  I managed to salvage about 1/2 gallon cream from my milk batch and made a huge bowl of butter which is perfect topped on warm zucchini bread.

Apricot Pineapple Jam

5 cups crushed apricots

1 can crushed pineapple

5 cups sugar

1 box sure jell

Stir in fruit and sure jell, cook to boiling, then add sugar and boil one more minute.  Freeze or bottle


Blueberry Jam

9 cups crushed berries

5 cups sugar

heat until thick and pour into jars and seal or freeze

Yum! I love apricot jam, I've never had it with pineapple, I may have to try that.
We went and picked free blueberries yesterday, we came home with TWO five gallon buckets! Wow I've got a job ahead of me!

To answer your question about mint leaves. I had a post on it but don't know where it is so I'll answer you here. You cut the stems at the bottom, gather up about 5 or 6 sticks, tie them with a string, hang them upside down for about 10 days then gently remove the leaves, stuff into a ziploc and freeze. Simply and leaves your kitchen smellin' yummy~
